Pug Tail Pumpkin Rolls ~ Meet Chef R-Chee & get the recipe!


Happy Wednesday everyone!

It is me...
R-Chee!



As you can see, I am working hard today as my mom's official taste tester!

We have been busy inventing the perfect healthy snack that can be enjoyed by both people and pets!

Personally, I love eating them both raw & cooked, but my dad likes them baked with honey, jam or a little bit of butter on top!

After making several different batches, here is the recipe I have finally developed, perfected and approved! :)

I have a written and pictorial version of the recipe for you below so you can bake some too!


 Pug Tail Pumpkin Rolls

I N G R E D I E N T S:

Dough:
3 cups flour
1/2 can of pumpkin
1 tsp cinnamon
1 egg
1tsp honey

Filling:
1/2 can of pumpkin
1/2 tsp cinnamon
1 tsp orange marmalade or honey

I N S T R U C T I O N S:

Mix ingredients for dough in large bowl, add flour if dough too sticky and water if too dry.
Refridgerate dough for 2 to 24 hours
Roll out dough 1/2" thickness
Mix filling and spoon over dough leaving 1/2" border arond the edges to look like a pizza.
Roll up dough into a log, wrp tightly in plastic wrap and refrigerate for at least one hour or overnight.  

When ready to bake: Preheat oven to 350°F and grease cookie sheet.  
Unwrap log from plastic and cut into 1/2" slices with a serrated knife.  
Place pieces on cookie sheet and bake for 20 minutes or until lightly browned. 
 
Let cool before serving.
Storage:  refridgerate or freeze rolls
Packed with vitamins!
Archie loves them!  4 Paws Up!

R-Chee's Kitchen ~ Peanut Butter & Banana Oatmeal Cookies


Happy Munchie Monday everyone!

Guess what I have for you today?

Drum Roll Please...


A plate full of my Yummy Peanut Butter & Banana Oatmeal Cookies!

And... I am also sharing my secret recipe with you as I have taste tested these for weeks to perfect it just for you!



I N G R E D I E N T S:

1 banana, peeled and mashed
1 cup whole wheat or white flour (I used spelt flour)
1 cup rolled oats
3 Tbls peanut butter
1 egg, beaten

I N S T R U C T I O N S:

Preheat oven to 325 degrees
Mash banana in a mixing bowl and add remaining ingredients.
Stir well to combine and let sit for 5 minutes.
Roll into 1" balls, place on greased cookie sheet and squish them flat with your fingers into cookies.
Bake for 20 minutes or until the bottoms are browned. 
Cool and refrigerate or freeze to store.
Makes 1 to 2 dozen cookies
Packed with wholesome protein, fiber & fruit!

They are healthy and super easy to make!

Let's make and eat some together!


Gather your ingredients


Mix all of them in a bowl and form some cookie balls and squish them down flat with your paws.

The place your cookie tray in the oven at 325 degrees for about 20 minutes or until they are golden brown!


Oooo!

They are done and ready to eat!


Oh momma...
stop blowing on it!

It is cool enough!

I promise!

Archie's Kitchen ~ Parmesan Spinach Cookies


Happy Monday everyone!

It is me...
R-Chee!

My momma and I have been cooking up a storm this morning! 

We have a mountain of savory & healthy cookies for you to enjoy today!

They are super yummy & easy to make for everyone in the family!

In fact, dad has been eating more of them than me today!

At this rate, we are going to have to make a whole separate batch just for me so I can have some too!



This is all I have gotten so far today!

That's ok though!

They are so easy to make that I can make more in a jiffy with momma helping me make the dough.

Do you want to make some with me?

This is all you need to make them at home too...

Ingredients:

1/4 cup Parmesan Cheese, shredded
1/2 cup cut leaf frozen Spinach
1/2 cup Milk
1 1/4 cup Whole Wheat Flour or White
1 Egg


Directions:

Preheat oven to 350 degrees Fahrenheit.
Allow spinach to warm to room temperature and mix with parmesan cheese, milk and flour until well combined.
Knead dough into ball and roll onto a heavily floured surface (the dough is very sticky) 1/4 inch thick and cut with you cookie cutter of choice. Bake for 10 to 15 minutes, until the cheese is bubbled and slightly browned.
Cool and refrigerate.
Makes 1 to 2 dozen cookies





Here is my dough all mixed and rolled out.

I got to cut the first cookie with our cutter!



Now they are on the cookie sheet and ready to go in the oven

Just a few more minutes and I will have a yummy, cheesy batch of my own to enjoy!
