Fun Recipe for the Whole Family! ~ Smiling Spuds


Smiling Spuds

I N G R E D I E N T S:

1 Russet potato 
1 egg
1 Cupcake or Muffin Tin
Your favorite grain or rice to decorate faces. 

 (I used Black Rice. :) )

I N S T R U C T I O N S:

Preheat oven to 350 degrees. 
Microwave potato 5-7 minutes until soft enough to scoop out center.
Cut about 1/3 of top off. 
Scoop centers out of both side of potato. 
Place large side of hollowed out potato in cupcake or muffin tin and let cool a bit.
When cool, crack in egg.
Place top back on potato.
Bake in oven for about 20 minutes. 
Allow to cool to room temperature, wrap in tin foil and refrigerate for several hours.
Slice the potato with a sharp knife to reveal the perfectly baked egg in the center.
Decorate smiley faces with your favorite edible (dog safe) items. I used Black Rice. :)

R-Chee loved his smiling snack, and I made a whole one for Fred for dinner. :)

This was a FUN recipe that I just made up!

You can be creative with your Smiling Spuds!

Think about all of the possibilities!

You can serve them hot or cold!

 Mash them up with avocado or mayo to make an egg & potato salad for a tangy side dish!
