Emmitt and I wanted to share his recipe for his favorite treats in the whole world.
He sings and dances for them every morning!
They are healthy, easy to make, store and serve!
Blueberry Quinoa Quiches
I N G R E D I E N T S:
4 eggs
1/8 cup milk
1 cup cooked quinoa
1/4 cup blueberries
I N S T R U C T I O N S:
Preheat oven to 350 F. Mix the eggs, milk and quinoa in a bowl. Spray mini muffin tins with non-stick spray and fill cup 1/2 way with the egg mixture. Sprinkle with 1 or 2 blueberries per quiche . Bake for 20-25 minutes until lightly browned.
Storage: Refrigerate or freeze unused portions.
They look so yummy, Emmitt, and we love that they are heart-shaped! Your mom sure loves you!
