Happy Friday everyone!
I am having so much FUN in the SUN this Holiday weekend!
We have slathered on our sunscreen and are ready to splash in the kiddie pool to stay cool!
Dad will be home from photography art camp just in time for dinner tonight!
To celebrate... Look what Momma made for all of us to enjoy!
A big batch of Red, White & Blue muffins!
If you would like to make them too all you have to do is...
Mix 1/2 cup of cooked quinoa, 3 eggs and 1/4 of applesauce in a bowl and spoon into muffin cups.
Sprinkle a few fresh or frozen blueberries on top of each one.
Bake them for 20-25 minutes at 350 degrees or until golden brown and set.
Momma does not add sugar or salt in this recipe because Gilbert and I eat them, but dad spreads honey,jam and or butter on them to give them added delicious flavor!
They are loaded with protein & fiber and are delicious!
